Vomer, or Peruvian moonfish (Selene peruviana), is a fish of the jack family that looks unlike its relatives: tall, flattened, silvery. The shape is practical too: the meat comes off the backbone in two even fillets.
The meat is white and medium-fat, the taste mild, the smoke milder than on mackerel.
Good on its own, on bread and butter, and in a salad that needs a light smoky accent.
