The body is cut into long ribbons, braided into a plait and smoked.
The meat is springy and slightly chewy, the taste salty, smoky and concentrated. It is eaten simply: take the plait and pull off one ribbon at a time.
With beer — as it is. Finely chopped, it goes into a salad, with rice or into pasta — like smoked bacon, only from the sea.
Sold by weight. Store at 0 to +4 °C; once opened, close the pack tightly, or the squid will dry out and turn tough.
