Wild keta (Oncorhynchus keta) caviar from Alaska — from Silver Bay Seafoods of Sitka. The fish is caught in the north-eastern Pacific, and the fishery is MSC certified. The only ingredients are roe and salt. Keta has some of the largest grains of any salmon — 5–7 mm, with a firm skin.

A kilogram, deep-frozen, is a format for the kitchen rather than the table: it is bought by restaurants, caterers and those who portion caviar themselves. The caviar is frozen after salting.

It is thawed in the fridge, just before use, so it makes sense to divide the kilogram into portions straight away and thaw only as much as you need.

Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.

Store at −18 °C or below.
