Keta (Oncorhynchus keta) has some of the largest grains of any salmon: 5–7 mm, amber-orange, translucent; only chinook's are larger. Among salmon caviars, keta is given first place, and a jar of keta caviar looks impressive on a festive table.
The skin is firmer than gorbusha's, and each egg pops distinctly on the tongue. Thanks to that same firmness, keta keeps its shape on warm dishes and does not run when used as a garnish.
Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.
Store at 0 to +4 °C.
