Keta (Oncorhynchus keta) gives some of the largest grains of any salmon — 5–7 mm, amber-orange, translucent; only chinook's can be larger. The skin is firmer than gorbusha's, and each egg pops distinctly on the tongue.
A 200 g jar is not for tasting but for the table: for a celebration, for starters at a big meal, for catering.
Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.
