Cod roe, salted and dried in thin strips. Drying concentrates the flavour: the saltiness comes forward, and a slight bitterness typical of cod roe remains at the end.
The simplest way is to eat it straight from the pack — with beer, a dry white wine or a spirit. Finely chopped or grated, the strips work much like Italian bottarga: in a butter sauce, in pasta, in fish soup, on hot potatoes.
The flavour of the strips is dense, so they are eaten a piece at a time, not by the handful.
Store in a dry place. Once opened, close the pack tightly, or the strips will absorb moisture and go soft.
