Unlike the cod roe strips, trout roe is dried whole, in its sac — the membrane that holds it inside the fish. The sac is salted and air-dried into one firm piece; it is nothing like caviar from a jar.
The taste is noticeably stronger than the same roe in brine: distinctly salty, with a bitterness that in jarred caviar can only be guessed at.
Cut it with a sharp knife into thin slices. Eat it with beer or vodka, or on bread and butter. Grated over pasta, eggs or potatoes, the roe sac replaces both salt and the fish flavour.
Store in a cool, dry place, in a tightly closed pack.
