Vobla and taran are the same roach, only from the Caspian and from the Azov and Black Sea. It is a simple fish: pale, lean, dry meat that pulls apart into fibres; the taste is salty and plain, nothing superfluous. It goes on the table by the bowlful and nobody counts the pieces.
Before picking it apart, roach is kneaded in the hands or tapped against the table — that way the meat comes away from the skin.
Roach is usually where people start, and sabre carp or perch come later.
