Osietra is the caviar of the Russian sturgeon (Acipenser gueldenstaedtii), one of the best-known and best-loved kinds of black caviar. The grains are medium, 2.8–3.0 mm, the colour from dark brown to brown and golden.

The taste is expressive, with a finish of hazelnut and butter, and the texture is tender. Always malossol.
