Black caviar is the roe of sturgeon, not salmon. The grains are small, firm and tender, with a soft sheen; the colour, as Lemberg describes it, ranges from dark brown to grey-black with a golden glint. The taste is nothing like red caviar: creamy, with nutty notes and a long finish.

This is the caviar of the Russian sturgeon (Acipenser gueldenstaedtii) from aquaculture. Lemberg cures it malossol — with a minimum of salt, so that the salt does not mask the taste of the grain itself.

Best served chilled: with blini, on toast or a baguette with butter, or with crème fraîche.

Store at 0 to +4 °C.
