Keta (Oncorhynchus keta) has some of the largest grains of any salmon — 5–7 mm; only chinook's are larger. The eggs are amber-orange and translucent, with a skin firmer than gorbusha's — they pop distinctly on the tongue. According to the label, it is a wild catch from the North Pacific.
The 400 g can is enough for a festive table for a larger party.
Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.
