Crucian carp is a fish of ponds and lakes, and when dried it shows: the meat is white, slightly sweet, with a freshwater flavour. Because of that flavour some people love crucian carp and others pass it by.
There is less fat than in bream, the fibre is shorter, the meat drier. The salt is moderate, the aftertaste sweet.
Crucian carp keeps its small bones even when dried, so it is eaten slowly, lifting the meat in flakes along the backbone.
