Coho (Oncorhynchus kisutch) caviar is recognised by its colour: a deep red, close to burgundy. The grains are medium, about 4–6 mm — smaller than keta, larger than gorbusha — and free-flowing.
The taste is brighter than gorbusha or keta, with a slight bitterness in the aftertaste — that is how coho is recognised. It is chosen by those who already know red caviar and want something different.
Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.
