Gorbusha, or pink salmon (Oncorhynchus gorbuscha), is a salmon from the cold waters of the northern Pacific. Its grains are about 3–5 mm — firm, free-flowing, light orange. The salt is gentle and does not mask the taste of the caviar.

Best served chilled: with blini, on toast or a baguette with butter, with crème fraîche, or with eggs Benedict.
