Snow crab (Chionoecetes opilio) lives in cold northern seas. It is smaller than king crab and belongs to a different family, although the two often sit side by side on the counter. The legs are thinner, the fibre shorter, the meat softer, and many find the taste sweeter.
Alaska Wild meat is already cooked; there is nothing to prepare — open the can and put it straight into a salad, tartlets or on toast.
Best served cold: with lemon and mayonnaise or aioli, in a salad with avocado. In hot dishes it goes in at the very end and is only warmed through — the fine fibre of snow crab falls apart even faster than king crab's.
